A cupcake, also called fairy cake or patty cake, is a small cake designed to serve one person. They are often baked in a small thin paper or aluminium cup. As with larger cakes, frosting and other cake decorations, such as sprinkles, fruit and candy may be applied.
Place sugar and room-temperature butter in a mixing bowl. Reduce the ingredients into cream with electric whisks, then add eggs one by one, salt, vanilla seeds and grated lemon zest and keep on beating with the whisks.
Finally, combine sifted flour and sifted baking powder, stirring with a wooden spoon to have a smooth and uniform dough. Place the dough into the ramekins without overcoming the half of the volume; while cooking, cupcakes must not overflow the ramekins. Bake the cupcakes.
